Frozen scallops are cheaper than fresh for a couple of reasons, scallops can only be harvested in relatively good weather especially in the summer months and the market price can drop somewhat, so the fishermen sell them to factories that freeze them and sell them when they are scarce. Frozen scallops absorb water during this process which drips away when defrosting and are usually heavily glazed to 30% to stop them from burning over a long period in the cold store.
