Just use scissors to cut the length of the leg to expose the flesh. The crabs have long spines over the legs and claw, handle with care. These are a batch of Orkney crab claws frozen down at source. Crab claws have spiraled ever upwards in price over the last ten years. The demand in the far east is huge for British crab and hundreds of tons now head there weekly on airfreight. It's far easier for crab boats to load their valuable stock onto one haulage flight bound for China than it is to disperse them bit by bit around the UK to buyers haggling over the price.

This batch of 200 kilo bought in March 2024 are called snap and release. Each claw has been scored and after defrosting you can snap them with your bare hands to release the white meat. Use a hammer if you want to go old school but the beauty with these is you don't particularly need one.

Our dressed crabs come from the East Coast, caught and processed by boats working out of Grimsby, Withernsea and Whitby. Our dressed crabs have a healthy portion of brown meat hiding underneath the delicious white meat on top and all sitting in a natural shell, hopefully yours will arrive with a claw on top but unfortunately we cannot guarantee this due to the days limited supply however, we will try our best to get you ones with the claw on top.

These are actually called mangrove crab or blue swimmer crab which are harvested in Indonesia, the image illustrated shows the live crab.
